Our easy hedgerow vodka/gin recipe

Put a spring in your step on those long winter walks with our easy Berry Schnapps recipe. Use whatever berries are in season; I have had great success using raspberries, blackcurrants and blackberries, but you can even use hawthorn (and if I am totally honest, I will confess I have also used frozen berries from the supermarket, but don’t tell anyone). You can vary the type of fruit and also the kind of alcohol, but the proportions remain the same, so feel free to play with it. For a more Christmas-flavoured version, add four cloves and half a cinammon stick.

1 pint vodka or gin

8oz berries

4oz sugar

Clean the berries, freeze overnight and place in a large kilner jar with the sugar. Brown sugar will give you a more caramelized flavour, while white makes for a smoother taste. Pour over the vodka or gin, then place in a dark cupboard for two months, shaking it every couple of days. Add a little more sugar to taste, then decant into clean little bottles for the perfect gift! We like ours served in one of our lovely leather Hunter’s flasks, on top of a wet hill 🙂
