Servings 8 sticks of bread

Equipment

  • 8 8 sticks, about a metre long bamboo canes work well, or hazel/willow sticks with the bark stripped off500g self-raising flour75g caster sugar1 tbsp milk powder200ml watera lump of butter

Ingredients

  • 500 g self-raising flour
  • 75 g caster sugar
  • 1 tbsp milk powder
  • 200 ml water
  • a lump of butter if you have some

Instructions

  • Add the cold water a little at a time until the mixture forms a stiff dough, then knead well for a few minutes until it is springy and smooth. Divide into 8 pieces.
  • Roll each piece into a sausage and pinch one end onto the top of the stick; continue wrapping in a downwards spiral, pinching the dough back onto itself at the other end to finish it off.
  • Hold the stick over the embers (but not in the flames!), keep turning so it cooks evenly and is golden all over, about 10 minutes - it should sound hollow when tapped if it is properly cooked.
  • Slide off the stick and fill the hole with butter, golden syrup, jam or Marmite! You can also mix fruit and nuts, grated cheese or a little sage and onion stuffing into the dry mixture for variety (omit the sugar if you are going for a savoury flavour).
